Lamb curry! super simple to make and everyone looooooved it. Try it, its good!
Easy Lamb Curry serves 4 (WW)
Lean lamb fillets, 400g thinly sliced (I used boneless chops)
brown onion medium, finely chopped
green beans 150g, halved
carrot 1 medium, peeled, cut into 3cm pieces
red pepper (capsicum) 1 large, cut into 3cm pieces (left this out cause i didn't have one!)
garlic clove 1, crushed
curry powder 1 tsp
baby corn 425g can, rinsed, drained
cornflour 2 tsp
soy sauce 1 tbs
chicken stock 1 cup (250ml)
pappadums 8 small
- Heat a large oil-sprayed non-stick frypan over medium-high heat. Cook the lamb, in batches, for 2 minutes or until browned. Set aside on a plate.
- Add the onion to the pan and cook, stirring, for 5 minutes, then add the beans, carrots and capsicum and cook for a further 5 minutes or until the veges are just tender. Add the garlic and curry powder. Cook for 1 minute or until fragrant. Return lamb to the pan and add the corn.
- Combine the cornflour and soy sauce in a small jug. Stir until smooth, then stir in the stock. Add to the pan and cook until the sauce boils and thickens.
- Meanwhile, place two pappadums on a sheet of paper towel, and cook in the microwave on high for 30-40 seconds or until puffed. Repeat with remaining pappadums. Serve with the curry.
- We served ours on Jasmine Rice. Enjoy.
