Sunday Baking

Now that i'm working,
 i need to get my baking done
on the weekends.
Yummy mini Tropical loaves - which were a hit
Got the recipe out of a magazine from New Zealand my mom sent me

Next up I made Luke's favorite Cranberry Orange Loaf by Trisha Yearwood

Cranberry Bread Recipe Ingredients:
2 cups all-purpose flour
1 cup sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. orange zest
1/2 cup fresh orange juice
1/4 cup warm water
1 large egg
2 Tbsp. melted butter
1 cup finely chopped walnuts
1 cup chopped cranberries
1 1/2 cup white chocolate morsels, optional
Cranberry Bread Recipe Directions:
1. Preheat oven to 350 degrees.
2. Sift together flour and next four ingredients; set aside.
3. Combine orange zest and next four ingredients in a bowl.
4. Add flour mixture, stirring until combined.
5. Stir in walnuts, cranberries and chocolate, if desired.
6. Pour into a lightly greased 9x5x3-inch loaf pan.
7. Bake one hour or until a wooden pick inserted into center comes out clean.
8. Cool in pan on a wire rack 10 minutes; remove from pan and cool completely on rack.
Makes: 1 (9-inch) loaf
These are super easy, protein full, gluten free

Cranberry Gingerbread Energy Balls
1 cup dates (soaked in hot water)
2 cups Almonds, 1 cup sunflower seeds
1 tsp cinnamon, 1 1/2 tsp ginger, 1/2 tsp cloves, 1/4 tsp sea salt
2 tbsp Molasses (I used golden syrup)
2 tbsp soak water from dates
1/2 cup dried cranberries

1. Soak dates in hot water to soften
2. Grind almonds in a food processor to a meal, pour into a large bowl. Do the same with the sunflower seeds and add to the bowl.
3. Chop the dried cranberries into smaller pieces and add to the nuts/seeds. 
4. Add the cinnnamon, ginger, cloves and sea salt to the nuts/seeds and stir to mix.
5. Drain the dates and blend with the golden syrup and extra water in the food processor until smooth.
6. Add dates to the dried mixture and mix well. With wet hands, form into balls.
7. I drizzled them with melted chocolate to sweeten the deal with the kids!

By Sunday night, i was done and dusted with the kitchen! I had been in it all day and the thought of dinner was painful! So off to Pinterest I headed to see if i could find a recipe for lemon blueberry pancakes! Then realised I had a whole container of strawberries that needed using so i made lemon pancakes and a strawberry syrup.
With whipped cream, it was dinner and dessert all in one!
